Vinification
The effect of not cold stabilising my whites is the potential formation of harmless crystals in the wine, often referred to as wine diamonds. This will only happen when the wine is exposed, for a prolonged period, at a very cool temperature.
Vineyard
Paarl is situated between Stellenbosch and the Swartland wine regions, hence warmer than Stellenbosch but cooler than the Swartland. The soils are a combination of decomposed shale & sandstone soils from two bushvine vineyards both planted in 1977.
