Description
A terroir driven wine from 46-year old single vineyard bush vines. Aromas of Granny Smith apple, citrus and cedar combine with hints of oak to create a complex and elegant entry on the palate. Full malolactic fermentation attributes palate weight, with a lingering, lively aftertaste. Oak management revolves around accentuating a sense of place, rather than to overpower the wine.

Vinification
The grapes were picked on the 8th of March 2018 in the cool morning hours at 22.5º Balling. The grapes were hand-sorted, crushed, pressed and allowed to cold settle over two days. Alcoholic fermentation was initiated in tank, after which the juice was pumped to barrel to ferment at 16º Celsius ambient temperature.

46 Year old Bush vines, on a slight south-easterly slope. 3 1/2 Hectares yielding 4 tons a Hectare. Mediterranean climate with winter rainfall and hot dry summers.

Hutton-Clovelly soils / High potential soils with good drainage and excellent water retention.
